Method
- Preheat oven to 350°F (175°C) and grease a loaf pan.
- Mix wet ingredients: pumpkin, coconut oil, sugar, maple syrup, almond milk, vanilla.
- Whisk dry ingredients: flour, baking soda, baking powder, spices, salt.
- Combine wet and dry; pour into pan and smooth.
- Bake 55-60 minutes; cool before slicing.
