Ingredients
  

Pumpkin Puree
  • 1 cup pumpkin puree
Wet Ingredients
  • 1/2 cup coconut oil, melted
  • 1/2 cup brown sugar
  • 1/4 cup maple syrup
  • 1 cup almond milk
  • 1 teaspoon vanilla extract
Dry Ingredients
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt

Method
 

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. Mix wet ingredients: pumpkin, coconut oil, sugar, maple syrup, almond milk, vanilla.
  3. Whisk dry ingredients: flour, baking soda, baking powder, spices, salt.
  4. Combine wet and dry; pour into pan and smooth.
  5. Bake 55-60 minutes; cool before slicing.
