Method
- Preheat oven to 375°F (190°C). Cook pasta until al dente, then drain.
- Sauté onion and garlic in olive oil until translucent. Add vegetables and cook until tender.
- Mix in crushed tomatoes, oregano, basil, salt, and pepper; simmer for 10 minutes.
- Combine cooked pasta, vegetable sauce, and ricotta cheese. Transfer to a greased baking dish.
- Top with mozzarella and Parmesan cheeses. Cover and bake for 25 minutes, then uncover and bake 15 more minutes.
- Let cool slightly, garnish with basil if desired, and serve.
