Vegetarian Baked Ziti

Ingredients
  

Pasta
  • 12 oz ziti pasta
  • 2 cups marinara sauce
  • 1 cup ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 1 cup chopped spinach (fresh or frozen)
  • 1 cup sliced mushrooms
  • 1 chopped bell pepper
  • 1 small onion chopped
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • to taste Salt and pepper
  • for sautéing Olive oil

Method
 

  1. Preheat oven to 375°F (190°C). Cook pasta until al dente, then drain.
  2. Sauté onion, garlic, bell pepper, and mushrooms in olive oil until softened.
  3. Add spinach, oregano, basil, salt, and pepper; cook until spinach wilts.
  4. Mix cooked pasta, vegetables, marinara, ricotta, and half the mozzarella.
  5. Transfer to baking dish, top with remaining mozzarella and Parmesan, then bake covered for 25 mins, uncovered for 10-15 mins.
  6. Let cool briefly before serving. Enjoy!

Notes

You can substitute fresh spinach with frozen; just thaw and drain excess water.
