  • 2 cups cooked rice
  • 1 can black beans, rinsed and drained
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
  • 1 cup bell peppers, chopped
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • to taste Salt and pepper
  • for garnish Fresh cilantro

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Mix rice, beans, corn, tomatoes, peppers, onion, garlic, and spices in a bowl.
  3. Transfer to a greased baking dish, top with cheese, and bake covered for 25 minutes.
  4. Remove foil and bake uncovered for 10-15 minutes until bubbly and golden.
  5. Let cool briefly, garnish with cilantro, and serve.

Notes

You can customize the spice level by adjusting chili powder and adding hot sauce if desired.
