Ingredients
  

Grains
  • 1 cup quinoa
Broth & Liquids
  • 2 cups vegetable broth
Vegetables
  • 1 cup chopped spinach
  • 1 cup diced bell peppers
  • 1 cup chopped zucchini
  • 1 cup corn (fresh or frozen)
  • 1 can black beans, rinsed and drained
  • 1 cup diced tomatoes
Spices & Seasonings
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cumin
Other
  • to taste Salt and pepper
  • 1 cup shredded cheese (optional)
  • 2 tablespoons olive oil

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Cook quinoa in vegetable broth until liquid is absorbed, about 15 minutes.
  3. Mix cooked quinoa with vegetables, spices, and olive oil.
  4. Transfer to a greased baking dish, top with cheese if desired, and bake for 25 minutes.
  5. Remove from oven, let cool slightly, then serve warm.

Notes

You can add more cheese or spices to suit your taste.
