Method
- Preheat oven to 375°F (190°C).
- Cook quinoa in vegetable broth until liquid is absorbed, about 15 minutes.
- Mix cooked quinoa with vegetables, spices, and olive oil.
- Transfer to a greased baking dish, top with cheese if desired, and bake for 25 minutes.
- Remove from oven, let cool slightly, then serve warm.
