Ingredients
  

Eggs and Dairy
  • 8 large eggs
  • 0.25 cup milk or cream optional
Vegetables
  • 1 cup diced bell peppers
  • 1 cup fresh spinach, chopped
Meat and Cheese
  • 0.5 cup cooked turkey bacon or beef sausage, diced
  • 0.5 cup shredded cheddar cheese
Seasonings and Herbs
  • to taste Salt and pepper
  • optional Optional herbs (parsley, chives, or thyme)

Method
 

  1. Preheat oven to 350°F (175°C) and grease a 12-cup muffin tin.
  2. Whisk eggs and milk (if using), then season with salt and pepper.
  3. Fold in diced vegetables, cooked meat, cheese, and herbs.
  4. Pour mixture into muffin cups, filling about three-quarters full.
  5. Bake for 15 minutes until set and golden. Cool slightly before removing.
