Ingredients
  

Pasta Salad
  • 1 1/2 cups dry orzo pasta
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1/3 cup red onion finely chopped
  • 1/3 cup Kalamata olives sliced
  • 1/2 cup crumbled feta cheese
  • 1/4 cup fresh parsley chopped
  • 2 tablespoons fresh dill chopped
Dressing
  • 1/4 cup olive oil
  • 3 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • 1 clove garlic minced
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

  1. Cook orzo until al dente, drain and cool.
  2. Combine tomatoes, cucumber, onion, olives, feta, parsley, and dill in a bowl.
  3. Whisk olive oil, lemon juice, zest, garlic, oregano, salt, and pepper.
  4. Add orzo to vegetables and pour dressing over top.
  5. Toss gently until evenly coated.
  6. Chill briefly before serving.

Notes

For best flavor, let the salad sit for at least 30 minutes before serving to allow the flavors to meld.
