  • 1/2 cup extra-virgin olive oil
  • 1/4 cup apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon pure maple syrup
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper

Method
 

  1. Combine olive oil, apple cider vinegar, Dijon mustard, lemon juice, and maple syrup in a bowl or jar.
  2. Whisk or shake until smooth and slightly creamy.
  3. Season with salt and pepper, then taste and let sit.
  4. Adjust flavors with lemon or maple syrup if needed.
