Ingredients
  

Salad
  • 2 ripe avocados diced
  • 1 cucumber diced
  • 1/2 red onion thinly sliced
  • 1 cup cherry tomatoes halved
  • 1/2 cup Kalamata olives pitted and halved
  • 1/4 cup crumbled feta cheese
Dressing
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • to taste Salt and pepper

Method
 

  1. Combine avocados, cucumber, red onion, tomatoes, and olives in a bowl.
  2. Whisk olive oil, lemon juice, oregano, salt, and pepper in a small bowl.
  3. Pour dressing over salad and toss gently.
  4. Sprinkle with feta cheese.
  5. Serve immediately or chill.

Notes

For best flavor, use ripe but firm avocados.
