Method
- Peel and mash the bananas in a bowl.
- Add eggs and mix well.
- Stir in the pancake mix until combined.
- Pour batter into a greased muffin tin, filling halfway.
- Bake at 350°F (175°C) for 15-20 minutes, then cool and serve.
Notes
Store leftovers in the refrigerator and reheat in the microwave.
