Delicious and healthy banana muffins made with just three ingredients, perfect for a quick snack or breakfast.

  • 3 pieces Bananas ripe
  • 3 eggs Eggs
  • 1 cup Kodiak Cakes Cinnamon Oats Power Cakes Flapjack and Waffle Mix or any flavor you like

Method
 

  1. Peel and mash the bananas in a bowl.
  2. Add eggs and mix well.
  3. Stir in the pancake mix until combined.
  4. Pour batter into a greased muffin tin, filling halfway.
  5. Bake at 350°F (175°C) for 15-20 minutes, then cool and serve.

Notes

Store leftovers in the refrigerator and reheat in the microwave.
