Caprese Chicken Skillet

Ingredients
  

Balsamic Vinegar
  • ½ cup balsamic vinegar separate the ½ cup and the tablespoon of vinegar
  • 1 Tbsp balsamic vinegar separate the ½ cup and the tablespoon of vinegar
Honey
  • 2 Tbsp honey separate in 1 tablespoon each
  • 2 Tbsp honey separate in 1 tablespoon each
Chicken
  • 6 pieces chicken tenders cut into chunks
  • 1 ¼ tsp salt
  • ½ tsp black pepper
  • 1 tsp lemon seasoning
  • 2 Tbsp extra virgin olive oil
Vegetables
  • 1 small yellow onion diced
  • 2 Tbsp minced garlic
  • 4 cups halved cherry tomatoes
  • ¼ tsp dried thyme
Cheese
  • 1 C part-skim mozzarella pearls quartered
  • ½ C fresh basil leaves chopped

Method
 

  1. Combine ½ cup of balsamic vinegar and 1 tablespoon of honey; simmer until thickened.
  2. Season chicken with salt, pepper, and lemon seasoning. Cook in olive oil until browned, then set aside.
  3. Sauté onion and garlic in the same skillet. Add tomatoes, thyme, remaining vinegar, honey, salt, pepper, and lemon seasoning; cook briefly.
  4. Return chicken to skillet, top with mozzarella, cover, and cook until cheese melts. Drizzle with balsamic vinegar and garnish with basil.

Notes

Use fresh basil for best flavor and serve immediately.
