- Combine ½ cup of balsamic vinegar and 1 tablespoon of honey; simmer until thickened.
- Season chicken with salt, pepper, and lemon seasoning. Cook in olive oil until browned, then set aside.
- Sauté onion and garlic in the same skillet. Add tomatoes, thyme, remaining vinegar, honey, salt, pepper, and lemon seasoning; cook briefly.
- Return chicken to skillet, top with mozzarella, cover, and cook until cheese melts. Drizzle with balsamic vinegar and garnish with basil.
Notes
Use fresh basil for best flavor and serve immediately.
