Coffee Cake Cookies

Ingredients
  

Streusel filling
  • 1/2 cup all purpose flour
  • 1/3 cup brown sugar, packed
  • 2 tsp. cinnamon
  • pinch salt
  • 5 Tbsp. softened butter, unsalted
Cookie dough
  • 1 1/4 cup all purpose flour, spooned and leveled
  • 3/4 cup cake flour, spooned and leveled
  • 1 tsp. cornstarch
  • 1 tsp. cinnamon
  • 1/2 tsp. baking soda
  • 1/2 tsp. baking powder
  • 8 Tbsp. cold unsalted butter, cubed
  • 1/2 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 tsp. vanilla extract
  • 1 large egg
  • 1 large egg yolk
  • 2 Tbsp. unsalted butter, melted
  • 3 Tbsp. heavy cream or milk
  • 1 cup powdered sugar, sifted
  • 1 tsp. vanilla
  • pinch salt

Method
 

  1. Mix flour, brown sugar, cinnamon, and salt for the streusel; work in butter until crumbly. Refrigerate.
  2. Preheat oven to 400°F (200°C). Line baking sheets with parchment.
  3. Cream butter and sugars, add eggs and vanilla, then gradually mix in dry ingredients. Form into balls and place on sheets.
  4. Indent each cookie, fill with streusel, and bake for 8-11 minutes. Cool on racks.
  5. Optional: swirl cookies with a circular motion immediately after baking for a smooth edge. Drizzle with icing once cooled.

Notes

Ensure not to overbake to keep cookies soft and moist.
