Method
- Mix flour, brown sugar, cinnamon, and salt for the streusel; work in butter until crumbly. Refrigerate.
- Preheat oven to 400°F (200°C). Line baking sheets with parchment.
- Cream butter and sugars, add eggs and vanilla, then gradually mix in dry ingredients. Form into balls and place on sheets.
- Indent each cookie, fill with streusel, and bake for 8-11 minutes. Cool on racks.
- Optional: swirl cookies with a circular motion immediately after baking for a smooth edge. Drizzle with icing once cooled.
