Ingredients
  

Dry ingredients
  • 270 g all-purpose flour spoon and leveled
  • 10 g cornstarch
  • 0.5 tsp baking powder
Dairy and flavorings
  • 225 g salted butter at cool room temperature
  • 150 g granulated sugar
  • 2 tbsp lemon zest from about 3 medium lemons
  • 2 tbsp dried culinary lavender buds
  • 1 large egg at cool room temperature
  • 180 g powdered sugar sifted
  • 2 to 3 tbsp fresh lemon juice
  • 0.5 tsp lavender extract optional
  • 3 to 4 drops purple food coloring
Garnishes
  • to taste lavender buds to garnish, if desired
  • to taste lemon zest to garnish, if desired

Method
 

  1. Preheat oven to 350°F / 180°C. Line baking sheets with parchment.
  2. Whisk dry ingredients. In a bowl, combine flour, cornstarch, and baking powder.
  3. Cream butter, sugar, lemon zest, and lavender until fluffy. Mix in egg.
  4. Add dry ingredients low speed until just combined. Scoop and flatten dough onto sheets.
  5. Bake for 12-15 minutes, cool on wire rack. Mix glaze with powdered sugar, lemon juice, and lavender extract. Decorate cookies and let set.

Notes

Store cookies in an airtight container for up to 4 days, separated by wax paper.
