  • 2 tablespoons olive oil

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Cut squash in half, remove seeds, and brush with olive oil. Season with salt and pepper.
  3. Place cut-side down on a baking sheet and roast for 30-40 minutes until tender.
  4. Let cool slightly, then scrape flesh into spaghetti-like strands with a fork.
  5. Serve immediately or with your favorite sauce or toppings.
