Ingredients
  

  • 2 large eggs
  • 1 tablespoon milk optional
  • pinch salt
  • pinch black pepper
  • 1 teaspoon butter or oil

Method
 

  1. Crack the eggs into a small bowl. Add milk (if using), salt, and pepper.
  2. Whisk the eggs vigorously with a fork until the yolks and whites are fully combined and slightly frothy.
  3. Heat butter or oil in a non-stick skillet over medium-low heat until melted and shimmering.
  4. Pour the egg mixture into the hot skillet.
  5. Let the eggs sit undisturbed for about 30 seconds until the edges start to set.
  6. Using a spatula, gently push the cooked edges towards the center, tilting the pan to allow uncooked egg to flow underneath.
  7. Continue to gently fold and scramble the eggs until they are mostly set but still slightly moist. Do not overcook.
  8. Remove from heat and serve immediately.

Notes

For extra fluffy eggs, try adding a tiny pinch of baking soda to the egg mixture before whisking.
