  • 1 pound pasta (penne, rigatoni, or your favorite)
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 14.5 ounce canned diced tomatoes, undrained
  • 0.5 cup vegetable broth
  • 0.5 cup full-fat coconut milk (or other vegan cream alternative)
  • 0.25 cup nutritional yeast
  • 2 tablespoons tomato paste
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon red pepper flakes (optional)
  • 15 ounce canned cannellini beans, drained and rinsed
  • 1 cup chopped fresh basil
  • to taste Salt and pepper
  • for garnish Vegan Parmesan cheese optional

Method
 

  1. Cook pasta, reserving 1/2 cup pasta water.
  2. Sauté onion, garlic, and bell pepper in olive oil.
  3. Stir in tomatoes, broth, coconut milk, nutritional yeast, tomato paste, paprika, and red pepper flakes (if using). Simmer for 10 minutes.
  4. Add cannellini beans and simmer for 5 minutes.
  5. Season with salt and pepper.
  6. Toss pasta with sauce, adding pasta water if needed.
  7. Stir in basil.
  8. Serve with vegan Parmesan cheese, if desired.

Notes

For a richer flavor, add a splash of balsamic vinegar at the end.
