  • 1/4 cup sun dried tomatoes medium size pieces, cut if large
  • 2 cups spinach
  • 1/4 cup parmesan cheese, shredded
  • 2 cloves garlic, minced
  • 2 tsp Italian seasoning
  • to taste salt

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Season chicken with Italian seasoning, salt, and pepper. Brown in a skillet until golden, then set aside.
  3. In the same skillet, combine Greek yogurt, milk, garlic, salt, and pepper to make sauce. Add sun-dried tomatoes.
  4. Transfer chicken to a baking dish, pour sauce over, sprinkle with Parmesan, and bake for 10 minutes. Flip chicken, bake another 10 minutes.
  5. In the last 5 minutes, add spinach and stir. Serve hot with toppings of sun-dried tomatoes and spinach.
